For today's Make Ahead I wanted to share this DELICIOUS recipe for Taquitos. I found it in LDS Living Magazine (Jan/Feb 2011 issue). I decided that it would be much easier to just post the recipe instead of re-typing the whole thing. I made one small change: instead of warming my tortillas in the microwave I fried them in a little hot oil. This makes them super soft and adds a bit of extra flavor. Also instead of freezing them uncooked-I baked these in advance. This way they can be quickly warmed in a microwave or toaster oven for lunches or snacks. I also ended up with 20 some of these things (minus the couple I scarfed almost immediately). Enjoy!!!

I'm going to have to bookmark this one. I love me some make ahead meals. Anything to get a little bit ahead for us busy moms.
