Here is the recipe (super easy by the way)
1 can cream of chicken soup
1 1/3 cups water
3/4 cup long grain white rice (I suppose you could use brown instead)
2 cups fresh or frozen vegetables
1/2 tsp onion powder
4 skinless chicken breasts
1/2 cup shredded cheddar cheese
Preheat oven to 375. Stir soup, water, rice, vegetables and onion powder together in a 9x13 baking dish (spray with cooking spray first). Top with chicken. Cover with tin foil. Bake for 45 minutes or until done. Top with cheese.
The changes I made were:
-I used only 3 chicken breasts
-I topped the chicken with the cheese and then returned it to the oven uncovered for a couple of minutes.
-I used the mixed frozen veggies but next time would just add peas and carrots, or peas and corn. Really people, why do they make mixed frozen veggies with Lima beans in them. Who goes around the store saying, "we have to find the kind of veggies with the Lima beans. I just can't have a meal without the Lima beans in them." I bet most of America picks the little devils out like myself. Well actually one more confession, I picked mine out and gave them to small fry. She gobbled them up. How sad is it when the mom gives her child the veggies she doesn't like.
this looks so good - i'm going to make it this week! great recipe!
ReplyDeleteand the lima beans? gross. i would do the exact same thing and feed them to the baby!
I have seen this recipe before and have never made it, I will have to add it to my try list. Lima Beans I agree with you--I just bought a mix the other day and had everything I like, but had lima beans too. UGH! :)
