New recipe

Another one of my new years resolutions is to try at least one new recipe a week. This isn't really a new resolution as I was doing this last year, but I just want to try and stick with it this year. Last night I made a new pork stir fry which was really good but we were so hungry who had time to take a picture so I thought I would try another new recipe today and share it with everyone. Soft and Chewy Chocolate Peanut Butter cookies. It only requires 4 ingredients and they are super easy to make. Greg described them as "good but different" I describe them as "delicious and chocolatey" you definetly need milk to go with these. Here's the recipe and some of my recommendations.

1 box devils food cake mix
1 package cream cheese (I use the low fat kind because you know cookies should be as healthy as possible)
1/2 cup smooth peanut butter
1 egg
Note: Soften the cream cheese really well other wise it is really tricky to get it all mixed. Also use a large bowl for mixing as the dough will be kind of crumby looking and is kind of messy to mix.
Mix all ingredients together. Roll into 1 inch balls. Place on cookie sheet and flaten with a fork dipped in sugar. (you can crowd them on the pan because they don't spread while baking) Bake at 375 for 7-8 minutes or until the edges are set up. They won't be crunchy like other cookies cause these are more like a brownie cookie. Cool on pan for 2 minutes and scarf or place on a cooling rack.

Here are mine. As a side note; today I went through all my spice jars/containers/bags and put everything together and into these handy little plastic containers. I used my wonderful labeler and got everything looking oh so very organized around here. I was tired of the mess and partly used containers cloging up shelf space. This works much better.
And mom, check out the book shelf you gave me for Christmas being put right to work holding all my cookbooks. We decided to put one in the kitchen and the other in the laundry room. They work great.

  1. Those Cookies look so good. I will have to try them. I am so glad that you have a blog now, and you are so good at keeping up with it. So what kind a jars do you have your spices in. They look great, a far cry from what my spices look like!
