You may or may not have heard of this but if you have not tried it-then what are you waiting for??? Magic Mix is made from flour, powdered milk and butter. You can use it to make a white sauce, condensed soups, homemade pudding or Alfredo sauce. I make a batch and then keep it in the fridge. It is not something that I use super often but when I need it-boy is it ever handy. I found this recipe at Everyday Food Storage.
Here is the recipe:
2 1/3 cups powdered milk
1 cup flour (all purpose) or a 1/2 cup cornstarch
2 sticks (1 cup) butter at room temp.
Put all ingredients in a large bowl. Mix with an electric hand mixer until it looks like cornmeal. Keep mix tightly covered in the refrigerator for up to 8 months.
To use to make a basic white sauce:
2/3 cup magic mix
1 cup water
Bring to a boil in a saucepan. If you want to make it into a cheese sauce add shredded cheese. Season with salt and pepper and any other desired seasonings.
