Make Ahead Monday-Egg Rolls

 I think the idea of making egg rolls probably scares a lot of people.  I know I would have never thought I could do it had one of my co-teachers taught myself and my Foods class how.  I am sure these are not exactly "traditional" but the beauty of making your own is that you can put whatever you want inside.  They are time consuming but not hard by any means. 
What you will need:
2 pounds of ground pork (of if you can't find it you can just finely chop some boneless pork loins)
assorted veggies (I use shredded cabbage, diced onions, chopped bell peppers, chopped broccoli, shredded carrots, chopped celery and garlic-a generous amount of each)
Seasonings (I use soy sauce, garlic salt, seasoning salt, pepper and red pepper flakes)
2 pkgs egg roll wrappers

Use the largest saucepan that you have.  Begin by cooking the pork until it is completly cooked.  Then add veggies (one at a time) and cook partially.  Push that veggie and the pork to the side of the pan and add another veggie.  Continue cooking and pushing to the side until you have cooked all of them.  Start with the veggies that take the longest to cook as they will be in the pan the longest.  Add seasonings every other veggie.  Once all the ingredients have been add, stir the whole thing together and taste and adjust seasonings as needed.  I like my filling a bit zippy and definetly seasoned.  Set aside and cool

 Each package of egg roll wrappers has directions on the back as to how you are supposed to roll them.  Use a beaten egg and a pastry brush to brush the edges of the wrapper before rolling to help seal them.  Just remember to not overstuff and try not to break any holes.  You have to deep fry these in batches of 4 or 5 (the standard steps-large pan, enough oil to cover half of the egg roll [turn half way through frying], make sure it is hot).  They can be scarfed right away or frozen and used for super easy meals on the go.  Just microwave for a few minutes and you have a handheld meal.  Don't be scared.  Give them a try.  These are a great make ahead recipe.
